Hana Katsuo

Hana-Katsuo (Flower Bonito) is, a type of dried bonito. It is made by removing the tar content from the surface of rough bonito (arabushi, not honkare-bushi) and shaving it very thinly.

“Hana” is the Japanese word for “flower” and “katsuo” means “bonito flakes.” It is said that this type of katsuobushi came to be called “hana katsuo” because its thin and transparent appearance resembles a flower.

It is used to make dashi (Japanese soup stock) and as a topping for yakisoba, okonomiyaki, udon noodles, etc.
