Sake no izushi (Salmon rice sushi) is,
A type of fermented food called “izushi” made from salmon and rice, which is eaten during the cold winter months in regions from Hokkaido to Tohoku and Hokuriku.
“Izushi” is a fermented food made by adding “koji” to fish fillets, rice, and vegetables and fermenting them with lactic acid.
“Salmon Izushi” is especially made with salmon, and it is a type of fermented food known as “marezushi” (fermented sushi).
It is known as a traditional food and local cuisine of Hokkaido and Murakami, Niigata Prefecture.
