It is known as a specialty dish of Togakushi and a famous local dish of Nagano Prefecture.
Togakushi is a plateau at an altitude of 1,000 to 1,200 meters above sea level, and is known for the large difference in temperature between day and night, which causes fog.
Because it is grown in this environment, the resulting soba has a pleasant aroma, a vibrant green color, and a delicious texture.
Togakushi soba is also known as “Kirishita soba” (soba under the fog), and is known as one of the best buckwheat noodles in Japan.
