Barisoba
Barisoba (Bari-soba) is a local noodle dish and gourmet food mainly eaten in Yamaguchi City, Yamaguchi Prefecture.
It is a dish of deep-fried Chinese noodles (thick noodles) topped with a thickened chicken broth containing cabbage, shiitake mushrooms, kikurage mushrooms, bamboo shoots, and green onions.
It is known as Yamaguchi’s local gourmet, B-class gourmet, Yamaguchi’s local soba, local noodles, Yamaguchi’s specialty, Yamaguchi’s soul food, Yamaguchi’s noodle dish, and local noodle dish.
The medium-thick noodles are fried in chicken oil, which is made by extracting the fat from chicken.
The soup is made mainly from chicken stock and pork bones, with fried cabbage, shiitake mushrooms, kikurage mushrooms, green onions, bamboo shoots, and hiraten (fish cake) added, seasoned with soy sauce and vinegar and soy sauce, and thickened with potato starch.
It is often served with vinegar soy sauce or ponzu soy sauce. There is a theory that the name comes from the “crunchy” appearance of the noodles or the “crunchy” sound they make when eaten.
It is said that this dish was created after the war at “Shunraiken” in Yamaguchi City with reference to Taiwanese cuisine. Currently, it is served at several restaurants in Yamaguchi City, including Shunraiken, and is available not only for one person, but also for three or five people on a large plate.
