Wappameshi

Wappa meshi (わっぱ飯・わっぱめし) is,
a rice dish made by steaming chicken, salmon, vegetables, etc. in a “wappa”, a “bento” container made mainly of cedar or other materials.

In addition to being a well-known local dish of Niigata, it is also eaten in Fukushima and other regions, and is known as a local dish of Aizu Wakamatsu and other areas.

The ingredients vary depending on the region, the cook, the restaurant, and the recipe. In addition to salmon and chicken, seafood such as salmon roe, scallops, shrimp, and conger eel; vegetables such as peas; wild vegetables such as bracken, royal fern, and bamboo shoots; mushrooms such as maitake, shimeji, and shiitake; eggs; kanpyo; ginkgo nuts; and chestnuts are also used.
