What is Basashi?
Basashi
Basashi (馬刺・馬刺し・ばさし・ Horse sashimi) is,
a dish made by slicing horse meat and eating it raw, without cooking, with soy sauce, Miso, etc.
It is one of the “Sashimi” in Japan. Horse Sashimi. Horse meat sashimi.
It is often served with grated garlic and ginger as condiments. It can be served with “Akami” (red meat), “marbling” (marbling), “Toro” (fatty meat), “Liver” (liver sashimi), “Tan” (tongue sashimi), “Futaego” (part of the belly), “Kone” (part of the leg), and so on.
When horse meat is processed into Basashi, it is required by law to be frozen. In addition, compared to beef and pork, horse meat is said to be less prone to the growth of bacteria due to its higher body temperature.

In Japan, Kumamoto is famous for its horse sashimi and other horse meat dishes, and it is also eaten as a local delicacy and local cuisine in Aomori, Fukushima, Yamanashi, Nagano, and Shizuoka prefectures.
