What is Bakurai?

Bakurai
A salted fermented seafood (Shiokara) made from sea squirts (ascidian, Sea Pineapple), and sea cucumbers. It is known as one of Japan’s ‘delicacies’.
It is a combination of salted sea cucumber intestines and salted ascidians (red ascidians). The name is said to have come from the ascidian’s shape, which resembles a bomb blast.
It is quite salty, but on the other hand it contains a mellow, concentrated aroma of the sea, sea squirts and sea cucumbers. For this reason, it is known as a ‘sake snack’ that goes very well with sake, and many ‘sake lovers’ prefer it.
