Tokushima ramen (徳島ラーメン・とくしまラーメン・とくしまらーめん) is,

Ramen noodles served in Tokushima Prefecture (Tokushima City, Naruto City, Komatsushima City, Itano County, etc.). It is known as Tokushima’s local ramen and as a local delicacy of Tokushima Prefecture.

There are three main types of Tokushima ramen: brown ramen with chicken stock, pork knuckle and soy sauce Tare; yellow ramen with pork knuckle, chicken stock, kelp, vegetables and soy sauce Tare; and white ramen with pork knuckle and light soy sauce (or white soy sauce, etc.), which is generally sweet and spicy in flavour.

In terms of regional distribution, ‘brown type’ is often found in the northern part of Tokushima Prefecture and Tokushima City, ‘yellow type’ in Tokushima City and Naruto City, and ‘white type’ in Komatsushima City and the southern part of Tokushima Prefecture.

The noodles are thin and straight, and the ‘brown type’ often has a raw egg, sweet and spicy pork belly, spring onions and bamboo shoots as toppings, while the ‘yellow type’ often has chashu pork, spring onions and bean sprouts. Locals often refer to it as ‘Chuka Soba’ or ‘Shina soba’.
