Muffler (Muffler),
A type of fish paste product made from fish surimi (fish paste). It is one of deep-fried fish paste (satsuma-age/ age kamaboko). It is one of Hokkaido’s local delicacies.

It is made by mixing fish paste with onion, fish sauce, salt, sugar, starch, etc., shaping it into a long, flat shape, and deep-frying it in rapeseed oil.

“Muffler” refers to a type of ‘satsuma-age’ in some parts of Hokkaido, mainly in the northern Hokkaido region, and is similar to what is commonly called ”kakuten”.

Its name is said to have come from its long, thin, flat shape, which resembles a “muffler,” a winter garment. In some regions, it is also called nagaten.

It is mainly used as one of the ingredients in “simmered dishes” and “oden,” and is also lightly roasted and eaten as a side dish with rice or as a snack with sake.
